Bakery Pizza

We have always been driven by a passion for flour, water and time. It is this journey that has made our bakery what it is today. Now we have decided to let the spirit of the bakery take over our pizza concept entirely.

Our take on the Roman Pizza al Taglio. Baked with a love of sourdough, a long prove for maximum lightness and a crispy base that showcases Österlen’s finest ingredients.

We have loved our Neapolitan years, but as bakers at heart, we have always dreamed of bringing pizza even closer to our sourdough heritage.

Our new Bakery Pizza is based on the same principles as our sourdough bread:

• Long proving: For maximum flavour and a happy stomach.

• Crisp & Airy: Baked on a tray (Al Taglio), resulting in a golden, crispy base and an interior as soft as a cloud.

Why the change?

Because we love innovation! And we believe you’ll love the texture and richness of flavour that emerges when artisan baking meets the art of pizza. Less pretentious, more social and incredibly delicious.

Our pizzas are baked on large trays and served in rectangular slices. Perfect for sharing! We recommend 2–3 slices per person for a full meal.

Goat cheese (chèvre), pear, walnuts, arugula (rocket), and balsamic glaze.

Sour cream, matjes herring, potatoes, browned butter, shallots, and chives.

Tomato sauce, nduja cream, fennel salami, roasted peppers, olives, Parmesan cheese, and oregano.

Notes:

– Stracciatella is the creamy filling from burrata cheese.
– Matjes herring is a mild, lightly cured young herring popular in Scandinavia.
– Nduja is a spicy, spreadable Calabrian pork sausage from Italy.
– Vesterhavsost is a Danish aged cheese, often compared to a mild Parmesan or Gruyère.
